The Brewery

After several months of searching, we finally found a suitable building for the brewery as we came across an old brick and flint grain store on the main site of Phillimore farms, Dunsden green. Three months of extensive renovations then followed in order to transform the barn into the brewery you see today. It then took another two weeks to install our custom built brewery plant.

We have a 20 barrel brew plant which is capable of producing up to 100 brewers barrels (28,800 pints) of beer each week. However, after recent building works which have increased the size of the brewery (and given us a nice new office!) we aim to increase fermentation capacity in 2010, allowing us to brew an extra 50 brewers barrels (14,400 pints) per week.

The brewery uses five basic raw materials:
  1. Water (known as liquor) drawn from a boar hole from behind the brewery
  2. Maris Otter pale ale malt, grown in East Anglia
  3. Hops sourced from Kent, Herefordshire and Worcestershire and Slovenia!
  4. Inverted sugar (produce of cane sugar)
  5. Yeast (our own strain)






All of our waste products are put to good use; the spent grains are collected by a local farmer for cattle feed and the hops used by local gardeners for their allotments.
